Ingredients needed for this class:

50 gr Guajillo chilies, deveined and soaked
50 gr Achiote (annatto) paste
1 Cup fresh orange juice
100 white vinegar
2 Cloves garlic
1 Teaspoon oregano
1/2 Teaspoons cumin
1 kilo White fish fillet (could be snapper, tilapia or sea bass)
Vegetable oil for frying
Salt

Roasted Pineapple 'Pico de Gallo'
1 Pine apple
1 Red Onion
2 Tomatoes
Fresh coriander
3 Green limes

For the red sauce
'Taquera' red sauce
4 Riped tomatoes
4 Serrano or green chiles (or 2 habanero chiles)
1 White onion

Corn or flour tortillas
Green limes to serve
